I have two types.
One of my gloves are for striking, the ones with the little bar under the palm for better punching.
The other glove which has no bar under it and is meant for grappling.
Which one of my MMA gloves should a use against a striker?
Never box with a boxer, never wrestle with a wrestler, never punch with a puncher..
Reply:if you are also a striker and want to go toe-to-toe with the striker, you should use the "little bar" gloves.
If you don't think you will be striking as much as the opponent, you should use the grappling gloves since you will probably be really close to the opponent to prevent him from using his full force.

Most competitions will require that you remove the bar before using those gloves in combar.
Even if you were allowed to, you would find it very difficult to grapple with gloves with the grip bar.
So go with the gloves without the bar.
